Ingredients

  • 10 oz marshmallows
  • 3 Tbsp butter plus extra for pan
  • 6 cups Rice Krispie cereal
  • 1 cup old-fashioned oats
  • 2 sticks butter
  • 1 cup brown sugar packed
  • 1 tsp salt
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup chopped raw almonds
  • 1 cup dried cranberries

Instructions

  1. Line a half baking sheet pan (11×17) with a silicone mat. Make sure the edges of the pan are also buttered.
  2. Make traditional Rice Krispie treats by microwaving 3 Tbsp butter and marshmallows on high for 2 minutes in large bowl. Stir in the Rice Krispie cereal.
  3. Work quickly to spread and press the Rice Krispie mixture into the prepared pan.
  4. Preheat oven to 425° F. Toast almonds for about 3 minutes on a sheet pan in the hot oven. Set the nuts aside but leave the oven on.
  5. Sprinkle your cup of old-fashioned oats on top of your Rice Krispie treat layer.
  6. Melt brown sugar and 2 sticks of butter together with salt to make the caramel. While stirring constantly, use medium high heat and cook the caramel for a few minutes until it is bubbly and turned a golden caramel color.
  7. Pour the hot caramel all over the Rice Krispie treats and spread it to the edges of the pan.
  8. Place pan into the 425° F oven for just a few minutes until the caramel starts to bubble.
  9. Pull pan out of the oven. While still hot, sprinkle with mini chocolate chips.
  10. Sprinkle a layer of toasted chopped almonds.
  11. It needs to cool, so you can cut into squares. If you’re in a hurry, you can cool it quickly for 20 minutes in the freezer.
  12. To finish it off, add a sprinkling of dried cranberries on top. You may have to press these in with your hands.
