Everyone needs a go-to date night dessert that’s easy yet impressive. Organic Chocolate Dipped Strawberries are one of my all time favorite desserts, second only to cheesecake. This 2 ingredient recipe is even better for anyone who loves to eat organic real food. There’s NO hydrogenated oils or corn syrups that you’ll find in packaged chocolate candy coatings made for dipping. This is made with organic coconut oil and organic dark chocolate served on organic strawberries. It can even be used on ice cream as a magic shell topping. You can really enjoy this good-for-you dessert!
Chill 2 pounds of strawberries in the fridge. Wash the strawberries and dry them well with paper towels. Leave the leafy stems on them!
STRAWBERRY WASHING TIP: Don’t wash berries until you are ready to use. Dry them really well because berries like to absorb water. Also, for this recipe, we need them very dry for dipping in the melted chocolate.
Break the 7 oz. of chocolate bars into small pieces. (I used 70% dark chocolate, but you can use any type you want). Melt chocolate bar pieces along with 2 Tbsp. of coconut oil.
I melt it in my microwave at full power for 1 1/2 minutes, stopping to stir after 30 seconds and 1 minute intervals. Microwave strengths vary, so once there are only a few noticeable solid pieces of chocolate left* in the mixture stop heating.
Keep stirring and the heat of the melted chocolate will melt the last few pieces. This will ensure that you won’t overheat the chocolate mixture. Line a pan that will fit into your fridge with parchment paper. Dip the strawberries by holding onto the stems into the chocolate.
Let excess drip away. It will still drip a bit and pool somewhat around the berry when placed on the parchment-lined pan, but don’t worry about that.
STRAWBERRY DIPPING TIP: Start with the largest strawberries first and work you way down in size to the smallest berries to be dipped last. Place pan of dipped strawberries into the fridge. The chocolate will be set within 20 minutes, but you should leave it in the fridge until ready to serve.
ORGANIC MAGIC SHELL BONUS TIP: You don’t want any of the leftover melted dipping chocolate to go to waste. This stuff is awesome on ice cream!
